Visited for the first time today and cannot wait to return. Superb quality ingredients, beautiful presentation, accompanied by lovely Rose wine. The Wagyu beef is a must!

A small but charming place to enjoy a lovingly prepared meal and receive impeccable service.
I couldn't possibly single out any one dish because everything was a 10/10 for me. I will definitely be back and will recommend it. ☺️
I was eager to eat there because Embolao's culinary offerings had been captivating me from the videos and photos I'd seen.
Well, I wanted to try quite a few dishes to properly evaluate this new spot in Vélez-Málaga, which, by the way, is becoming increasingly difficult to find around here. So, for that reason alone, a huge thank you to the whole team for taking a chance in these times.
That being said, I must mention that the tinto de verano (red wine and lemonade) was fantastic, with the perfect balance of soda water, lemon, and wine.
Later, the chicharrón (fried pork rind) from Cádiz was given a special touch by the lime zest, but what truly made the dish spectacular was the Jaleo olive oil from Jaén, which smelled amazing and tasted even better.
The pork jowl toast with mango, also finished tableside with a blowtorch, gave it a crunchy texture that tasted excellent, with a delicious sweet and savory contrast.
The duck saam was a surprising dish thanks to its sauce, its wrapping, and the perfect doneness of the meat. But let's get to the heart of the matter, the must-try dishes if you go to Embolao. The Wagyu croquettes are incredible, from the creaminess of the béchamel sauce to the breading and their own unique flavor. They melt in your mouth, and the touch of pork jowl on top adds a delicious finishing touch.
The Korean chicken wings are so tender the meat falls off the bone with just your tongue; you don't even need to use your teeth. The sauce is amazing, and the chicken is cooked to perfection.
The cachopo was cooked perfectly, the cured beef was high quality, and the Gouda cheese gave it a wonderful flavor and creaminess. However, my only complaint about the entire lunch was the breading. For someone like me, who has been to Asturias three times and tried several cachopos, the breading was far too thick. The most important elements of a cachopo should be the meat and the filling; a very thin layer of breading is sufficient to enjoy this dish, and here it was too heavy. Just that small change would make it a perfect cachopo.
The dessert we had was brioche with vanilla ice cream, finished tableside with a touch of burnt sugar and cane honey, which gave it a crunchy texture and incredible sweetness.
The service was exceptional, both from Javier and the two waiters, who were always attentive to our needs and suggestions. In short, it was a pleasure having lunch there today, and although the bill might seem expensive, for two people who want to eat without trying as many dishes as we did today, half the price would be more than enough. Like I said, it was a special occasion because I wanted to try as many dishes as possible.
We wanted to try Embolao again because we loved it the first time and wanted to enjoy it once more.
This time we started again with the Cádiz-style pork crackling, which was delicious, once again.
We continued with a bravo (spicy potato dish) that had an incredible crispy texture and excellent flavor.
Then we ordered a pork loin toast with Gouda cheese, which was like eating a pizza in a gourmet Italian restaurant, it was so wonderful.
The Moorish croquettes really captured the flavor of pinchos (small skewers) and they're certainly comparable to the cecina (cured beef) croquettes, but of course, they're completely different depending on what you want to try. The thinly sliced pork loin, prepared like carpaccio, wasn't on the menu, and Javier's recommendation was spot on because the meat melted in your mouth, and the sauce gave it a fresh and unique flavor.
The Filipino cake was creamy and incredible, and the vermouths were very good; honestly, we were right to order them mixed with Casera soda because on their own they would have been too strong.

If the food is already absolutely incredible, the staff and their friendly service are unbeatable.
We ordered EVERYTHING. The Russian salad, the spicy "lingote bravo" (a type of sandwich), the cured beef and Moorish croquettes, the tuna brioche that wasn't on the menu (AMAZING, A PERFECT 10!), the duck saam, the Korean chicken wings, the pork belly toast with mango (ANOTHER 10! INCREDIBLE, AND I DON'T EVEN LIKE MANGO, BUT THE FLAVOR WAS AMAZING!), and for dessert, recommended by one of the waitresses, the brioche (I don't know if that's how it's spelled, but I don't care, because if everything else was already fantastic, this was the perfect ending).
We were expecting a fairly high price, and to be honest, it seemed a bit low considering the quality, quantity, and flavor.
We'll definitely be back!
